Dish of the Week: Tuna Nicoise

This is a favorite in our house. Lay a bed of any type greens you like. Sear 6 oz. of fresh tuna (we like it rare to medium rare), boil some new potatoes, steaming the green beans for the last couple of minutes, add a hard boiled egg, some Kalamata olives, and top with lemon vinaigrette. Garnish with cherry tomatoes, and you have a fresh, healthy, and filling salad.
