The dish you see above is the dish I returned home to after four days on the west coast, at a conference overeating carbohydrates. I have at times in my career been legendary for the lengths I will go to avoid conference travel, almost precisely because it gets me so far out of my diet and fitness routine.

But this dish is a real welcome home: Italian chicken stew, or spezzatino. We learned the original recipe at https://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-stew-recipe-1914720 and we add artichoke hearts (canned in water). If you read the reviews there, lots of folks add zucchini or summer squash, or additional celery and carrots. It's hard to get wrong, though; there's enough earthiness to make it a comfort food favorite. Good nutrition too: 325 calories, 26 g carbs, 24 g protein, 15 g fat
